Poached Eggs over Sweet Potato Fries

Instructions
  1. Prepare fries according to package instructions.
  2. Set eggs out at room temperature. Fill a large saucepan about half full of water and add vinegar.
  3. When fries have about 10 minutes left to cook, bring water almost to a boil, then lower heat to keep at a gentle simmer. Form a whirlpool and drop one egg at a time into the center. Poach 3 to 4 minutes. (See recipe for Poached Eggs for more details.)
  4. Divide cooked fries between two shallow bowls or small plates. Place one poached egg on top of each.
  5. Drizzle olive oil over the egg and sprinkle paprika on top.
  6. To eat, cut across the egg several times and toss to coat fries with egg yolk.
