Instructions
  1. Make the Avocado Orange Dressing per recipe instructions.
  2. Cut kale leaves off the stems, then cut into bite-size pieces to yield 8 to 10 cups lightly packed. Rinse in a colander (or the insert of a salad spinner), then pat (or spin) dry. Place in a large bowl.
  3. Combine about half the dressing and kale; toss to coat well.
  4. Drain mandarin oranges and add to salad, gently tossing again. Add more dressing if desired, or serve extra on the side.
  5. Coarsely chop pecans and sprinkle on top before serving.
