Instructions
For nuts:
  1. Preheat toaster oven or oven to 250°F.
  2. Spread out the peanuts or cashews in a single layer on a baking sheet. Roast until fragrant and just beginning to turn golden brown, about 10-15 minutes. Stir about halfway through. (Don’t roast if using pre-roasted nuts.)
For sauce:
  1. Squeeze juice from half a lemon directly into a small bowl straining out seeds, or use about 1 tablespoon of bottled lemon juice.
  2. Mix in soy sauce and ginger with a fork or whisk. Slowly drizzle in oil, whisking as you do, until thick and creamy.
  3. Add nuts right before serving. Chop first, if desired.
