Poached Eggs with Tomato and Basil

Instructions
  1. Poach eggs according to our recipe for Poached Eggs (or use an egg poacher).
  2. While eggs cook, toast the English muffin or bread. Spread butter (or drizzle olive oil) over the toast.
  3. Cut two thick slices from a large tomato. Sprinkle with salt and pepper.
  4. Slice the basil leaves into julienne strips.*
  5. Place a tomato slice on each piece of toasted bread, then gently slide a poached egg on top, and garnish with basil.
  6. Season with more salt and pepper if desired.
