Instructions
  1. Cut the tomatoes in halves or quarters. Scoop or squeeze out most of the center seeds and juices. Chop to the size you prefer for your salsa. Place in a medium bowl.
  2. Finely chop onion and cilantro, then add to tomatoes.
  3. Cut off stem end of the pepper and slice in half lengthwise. Remove and discard inner seeds and pith. (Wear gloves if sensitive.) Mince one half of the jalapeño and add to tomato mixture. We recommend starting with half, then adding more at the end if desired.
  4. Mince garlic and add.
  5. Juice lime directly into salsa. Add oil and stir well.
  6. Season with salt, pepper, and hot sauce. Add more seasonings and jalapeño, to taste.
