Instructions
  1. Chop onion and mince garlic. Heat oil in a large saucepan over medium-low heat, then add onion, but set garlic aside. Cook and stir while you continue.
  2. Wash and trim potatoes, but do not peel. Cut into large chunks.
  3. Rinse green beans in a colander, then trim ends and snap in half (or into smaller pieces if desired).
  4. Add garlic to onions and cook another minute.
  5. Add crushed tomatoes, tomato paste, water, salt, pepper, and red pepper. Bring to a simmer and cook 2 minutes (uncovered).
  6. Stir in green beans and potatoes. Cover and simmer about 10 minutes. Uncover and cook another 20 to 30 minutes, or until vegetables are soft and part of the liquid has cooked off. Remove from heat.
  7. Stir in (or garnish with) Parmesan cheese if desired.
