  1. Heat water and milk in saucepan over medium-high heat until boiling.
  2. Stir in grits and cook on low (covered, with lid ajar) 20 to 40 minutes, stirring frequently. NOTE: The amount of time depends on the brand of grits and your preference.
  3. Remove from heat and stir in butter, salt, and pepper.
  4. Stir in cheese if desired.
