Instructions
  1. If using a fresh lime, grate (zest) the outer green part of the peel using the small to medium holes of a grater. Juice the lime to yield 2 tablespoons.
  2. Place water, lime juice, and salt in a large saucepan and bring to a boil over high heat. Add millet and stir.
  3. Bring water to a boil again, then reduce heat to low. Cover and simmer 15 minutes. Remove from heat and keep covered. Let stand 10 minutes.
  4. Chop cilantro.
  5. Add butter to millet and keep covered until butter melts.
  6. Add cilantro, lime zest, and pepper. Fluff and stir with a fork. Adjust seasonings to taste.
