This story starts with two children (a boy and a girl) and a mother who loved to cook healthful meals. Her husband called her Earth Mother, and she took great pride in feeding her young family all types of vegetables, fruits, homemade yogurt, and other wholesome foods.
This might not seem strange to you now, but in the early 1990’s it was not so common. Earth Mother’s children had never heard that they were not supposed to like green food. When Earth Mother took her little ones to the grocery store, Earth Child #1 would gleefully exclaim, “Look Mommy, they have Swiss chard! Can we get some, please, please, please?” Then Earth Child #2 would chime in with “I want some bok choy!” Mere mortal mothers gave Earth Mother and her children sideways glances wondering if they were actually from Mars! However, these characters were not aliens from an episode of Doctor Who. They were normal humans, and they were simply us!
We have spent many years eating wholesome foods, while navigating through a world of unhealthy choices, obstacles and distractions. We are not perfect. We’ve had our ups and downs, but we try to stay on course, eating mostly good food that enhances our health.
As Rebecca and Greg gained independence, they had to follow their own journey of discovery. They began to indulge in some enticing “goodies” at the homes of friends and family members. Then there were the birthday parties and sleepovers with pizza, cheese puffs, and ice cream for dinner. As they headed off for college they made their own decisions about food, sometimes wise and sometimes not so much.
They learned many lessons at college, but one of the first was this: they did not life cafeteria food! They quickly grew tired of the uninspiring menus, and as soon as they had a dorm room with a small kitchen they began cooking for themselves, or at least trying to.
That’s when the phone calls started…
⌘ “How can I afford to eat healthy, gluten-free food on my salary?” ~ Rebecca
⌘ “How do I cut down this recipe to fit into my baking dish?” ~ Rebecca
or
⌘ “What spices do I really need to buy? They’re so expensive!” ~ Greg
⌘ “What can I use to steam vegetables since I don’t have a steamer?” ~ Greg
It wasn’t long before an idea began to crystallize…
⌘ “Wouldn’t it be fun to write down what we’ve learned and share it? I bet other people out there who would like to know this too.”
~ Rebecca, Greg, and Mom
Along the way, our project and family grew. Rebecca and Greg’s grandparents got involved, contributing some old family favorites and testing new ones. Rebecca married Nick, bringing not only another son into the family circle, but another cook as well! As you peruse our recipes, you’ll be able to identify each person’s influence. Enjoy, and be sure to buy our cookbook that includes detailed information on setting up your kitchen, along with many new recipes.
