Aioli on Your Sandwich?

Although most people will ask for mustard or mayonnaise on their sandwich, one of our favorite ways to dress one up is with aioli.

What’s aioli, you ask? Well, true aioli is just garlic and olive oil, mashed up using a mortar and pestle, until the mixture becomes creamy. As you can imagine, it takes a little “elbow grease” to make. Sometimes egg yolks are added to help with the emulsifying process.

So, how is aioli different from mayonnaise? Mayonnaise is basically oil and egg yolks beaten together until creamy. Lemon juice or vinegar is added for tartness, and it’s seasoned with salt and pepper.

Most of the aioli you find today is made like mayonnaise but with added garlic. Add some horseradish, and you have horseradish aioli, another favorite of ours.

However you make it or buy it, why not give aioli a try on your next sandwich, in honor of National Sandwich Month?
