Recipes for Beans and Legumes

Here are some of our favorite recipes for using beans (or legumes). They are a staple of Rebecca's vegan diet, but we all love beans. They're economical, high in fiber, and provide valuable protein. Richard grew up on Cajun red beans and rice, and Bobbi often ate pinto beans and cornbread in her Texas family. In fact, a traditional bean dish can be found in almost all cultures.
