Almond Peach Smoothie

“If you love peach ice cream but not the calories, give this thick and creamy smoothie a try. It may taste like dessert, but we have it for breakfast. We prefer a hint of cardamom, but add extra if you want the flavor to be more prominent.  The recipe makes 1 large (2-cup) serving, but it can be divided into 2 smaller servings, if preferred. It’s best to drink smoothies immediately, but we sometimes double the recipe and freeze them in mason jars, to take to work on mornings when we don’t have time for breakfast. If thawed, stir before drinking.” ~ Rebecca

Ingredients
  • 1 cup almond milk
  • 1 cup frozen peaches
  • 1/2 of a banana (preferably frozen)
  • 1 tablespoon almond butter
  • 1/2 teaspoon ground cardamom
  • honey or other sweetener (optional)

Instructions
  1. Pour almond milk up to the 1-cup mark of the blender container.
  2. Add remaining ingredients, except sweetener, and blend until smooth.
  3. Taste and sweeten if desired.
Recipe Notes

Tip: To freeze bananas, peel them first, then break in half or into smaller pieces. Seal in a plastic baggie and freeze.
