Caprese means “from the island of Capri” which is where this now famous salad originated. It is comprised of mozzarella, tomatoes, basil, oil and vinegar, representing the red, white and green of the Italian flag. You can make variations by adding ingredients or changing the presentation.
For example, we’ve laid it out in a line, alternating slices like this:
Or in a circle on a platter with an egg-shaped piece of mozzarella on top of the tomato slices:
We’ve added some avocado and mixed it all up into a salad like this:
Or with cherry tomatoes and a small mozzarella ball on a toothpick for a dainty little Caprese Kabob:

This simple combination of mozzarella, tomatoes and basil comes from the tiny Island of Capri, off the Italian coast of Naples. It represents the colors of the Italian flag: red, white and green.
Tools:knife and cutting board, measuring spoons, platter

- 1 large tomato
- 1 large ball fresh mozzarella
- 8 basil leaves
- 1 tablespoon vinegar (balsamic recommended)
- 1 tablespoon oil (extra virgin olive oil recommended)
- Salt and pepper to taste
- Basil sprigs
- Slice the tomato and mozzarella.
- Chop the basil: stack the leaves, roll, then slice across into thin julienne strips.
- Arrange on a platter: alternate a slice of mozzarella with a slice of tomato.
- Drizzle vinegar and oil over the salad. Season with a little salt and pepper, then garnish with chopped basil and a few sprigs of basil.
SERVING SUGGESTION:
- Serve as an appetizer, or place on a bed of greens for a light lunch. Eat with crusty Italian bread.
VARIATIONS:
- Place 1 small mozzarella ball on a toothpick, then a basil leaf and finally a cherry tomato. Drizzle oil and vinegar over them or serve with Balsamic Vinaigrette.
- Add black olives, roasted red peppers, capers and/or avocados.
- Substitute grilled peaches for the tomatoes.
