These little kabobs are great appetizers for a hot summer day, or make larger versions to serve as a salad or dessert. Use as much of the ingredients as you need to make the number of servings you want.

Ingredients
  • watermelon
  • feta cheese (in a block, not crumbles)
  • cherry tomatoes
  • basil leaves (or fresh mint leaves)
  • 1 recipe Sweet Balsamic Reduction (optional)

Instructions
  1. Cut watermelon into 1-inch cubes. (See our video on How to Cut a Watermelon.) Place in a large bowl.
  2. Cut feta into 1-inch cubes.
  3. Take the skewer sticks (or use a large toothpick as shown) and begin threading items in this order: watermelon cube, feta cube, basil or mint leaf, cherry tomato. You can do one set of this combination or add more for a larger serving.
Recipe Notes

SERVING SUGGESTIONS:

Serve plain or with Sweet Balsamic Reduction on the side or drizzled over the kabobs.
