Here's a simple and refreshing recipe for a classic, creamy coleslaw. Add a little mint if you have some in the garden for a little interest. We like to make this a few hours ahead of time (or the day before) since it tastes even better after it has time to absorb the dressing.
Tools:large bowl, measuring cups and spoons, knife and cutting board

- 1/4 cup mayonnaise
- 2 tablespoons lemon juice (1 small lemon)
- 1 teaspoon honey or to taste
- 1/2 teaspoon salt
- 1 pinch ground black pepper
- 6 cups coleslaw mix
- 2 small green onions
- 1/4 cup chopped parsley
- 1/2 tablespoon finely chopped mint (optional)
- Combine dressing ingredients in a large bowl and stir to blend well.
- Place coleslaw mix in bowl with dressing.
- Cut green onions into thin slices, using both green and white parts. Chop parsley and mint. Add to bowl and toss to coat well.
- Refrigerate until ready to serve.
Tip: To make your own coleslaw mix, thinly slice red and/or green cabbage to yield 5 cups and grate a carrot to yield 1 cup.
