We like to combine different citrus juices with strawberries, but using only one type of fruit works well too. We start with 2/3 cup honey, then we add liquid stevia drops to sweeten it to our taste preference (and depending on the types of fruit involved). Definitely add more sweetener if using only lemons or limes. This pretty, pink beverage is a refreshing addition to cookouts for July 4th or any other hot summer day.
Tools:large (4-quart) saucepan, colander (optional), knife and cutting board, blender

- 5 cups water divided
- 2/3 cup honey (raw, local honey recommended)
- 2 cups citrus juice (fresh squeezed recommended)
- 2 cups strawberries divided in half
- 1/2 cup mint leaves (lightly packed)
- stevia or other sweetener
- ice
- Boil 2 cups water in saucepan. Cool 1 to 2 minutes.
- Stir in honey until dissolved. Pour into blender container.
- Squeeze citrus juices* and drain through a colander or strainer to catch any seeds. (Alternatively, peel fruit and use whole segments, removing seeds.) Add to blender.
- Trim tops off 1 cup strawberries, and place in blender along with mint leaves. Blend until smooth.
- Dilute by adding 2 to 3 cups water and more sweetener, to taste. Store in refrigerator.
- Before serving, slice the remaining strawberries. Add to juice, along with lots of ice.
*Tips:
a) We use 1 grapefruit, 2 oranges, 2 lemons, and 1 lime.
b) Stevia is an herb that is very sweet and has no calories. It comes in a liquid and powdered form, as well as the whole herb. We prefer the liquid drops because they blend in better.
