If you’re a gardener, then you’re probably harvesting more bushels of zucchini and yellow squash than you know what to do with! Your neighbors might even avoid dropping by for fear you’ll insist they take a few (dozen). Or worse yet, they might have to listen to another zucchini joke!
Question: Why did the zucchini refuse to cross the road?
Answer: He didn’t want to get squashed!
Zucchini jokes are almost as abundant as the vegetables that spawn them. But, really, summer squash isn’t all bad. It’s delicious cooked on the grill:

However, we understand that you might not have the ability to grill outdoors, so we’ve decided to share some of our favorite squash recipes that you can cook indoors.
For a lovely lunch or appetizer, whip up these easy Zucchini Pancakes. A Greek friend told us that zucchini pancakes are a very popular item in Greece these days, so we tried to recreate her description of them. They’re packed with zucchini flavor and held together with a little Greek yogurt and herbs. And they’re beautiful too!
