Butternut squash: how to peel and cut

Have these awkward autumn edibles frightened you away from giving them a try? Are you spooked by the conundrum of how to peel and cut them? Don’t be afraid. It’s easier than you think.

To slice or cube a butternut squash, begin by cutting a thin slice off the top and bottom.  Stand it up vertically on its now-flat, bottom edge and use a large chef’s knife to cut down the middle. Peel down to the bright orange layer, about 2-3 swipes of a vegetable peeler.

Use a large spoon to scoop out the seeds and stringy fibers in the center.

If you want slices, cut each half across to your desired thickness.

For cubes, cut each half in half again, crosswise. The solid narrow part will be one piece and the hollowed out rounded part another. Cut each quarter into 1-inch cubes.

And that’s all there is to it!
