Fall is here, and so are the fall and winter squashes. Here’s a great idea for using butternut squash. Serve these as an appetizer, snack, or side dish.
Tip: Place squash slices in a large bowl with a lid and shake to coat them with spices.

Make these as spicy as you like, but don’t leave the heat out--it’s a very nice contrast to the sweetness of the squash.
Tools:baking sheet, knife and cutting board, large* and small bowls, measuring spoons

- 1 (2 to 3-pound) butternut squash (4 to 5 cups sliced)
- 2 tablespoons high heat cooking oil
- hot pepper sauce to taste
- 1 tablespoon flour (any type)
- 2 teaspoons curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 lemon (optional)
- Preheat oven to 425°F. Spray or rub oil on a baking sheet.
- Trim ends off squash, cut in half lengthwise, and scoop out seeds. Peel, then slice across to make 1/2-inch-thick slices. Place in a large bowl* and add oil and hot sauce. Toss to coat well.
- Mix together flour, curry powder, salt, and pepper in a small bowl. Sprinkle over squash sticks and toss again.
- Place slices on the greased baking sheet in one layer. Cover with foil and bake 20 minutes. Remove foil and bake another 15 minutes. Use a food turner to turn the slices over and bake another 15 minutes, for a total of 50 minutes.
- If desired, squeeze some lemon juice over the slices right before serving, or serve with a wedge of lemon so each person can do their own.

- Serve with pork, Roast Chicken, and/or Lentils.

I have made this several times. It is amazingly delicious. If pressed for time when preparing it for a side dish, I have used the pre-cut butternut squash that is readily available in grocery stores (though you may have to search for it.)
