Rebecca and Nick's Favorite Recipes

Rebecca is continually adjusting her diet, but these have been or currently are her go-to recipes. Her husband Nick is a really good sport and will follow whatever her dietary restrictions are, at least at home. He definitely enjoys a wider menu when he goes out or cooks for himself. They both love vegetables, fruits, beans, and grains, so they are still our Clean Foodies. Rebecca has been mostly vegetarian, except for the occasional nod to salmon, but is now primarily vegan.  She will eat an occasional egg and is trying to include a larger variety of fish in her diet. In the end, she eats what makes her feel better, not worse. She's also been adjusting certain recipes to be vegan, using coconut oil for butter, applesauce for eggs (when appropriate), and the occasional vegan cheese. Check these out, especially if you have dietary restrictions.
