Poached Salmon with Red Bell Pepper Sauce for Dinner Tonight

What’s for Dinner Tonight?

This meal is light and healthful, and quite easy to make as well. You can prepare the sauce as you cook the other items, make it the day before, or even weeks before and freeze it.

Red Pepper Sauce over Poached Salmon
Basic Millet  or Roasted Baby Potatoes
Broccoli with Dijon Garlic Dressing or Braised Bok Choy

Sometimes the sauce is brighter than other times, depending on the peppers.

We usually poach salmon when we serve this red pepper sauce, but you can grill it or pan-sear it, too.

The sauce is delicious over pasta as an interesting replacement for tomato sauce, and it tastes great over boiled potatoes, chicken, or thin slices of flank steak. This is a versatile sauce, which is especially nice if you don’t eat tomatoes.
