This is one of the prettiest and easiest salads you can make. It’s especially delicious (and less expensive) during the summer when these fruits are in season. Serve it for breakfast, lunch, or dinner as a side dish or dessert.
Tools:colander, knife and cutting board, large bowl, measuring cup
|
- 1 cup blueberries
- 1 cup strawberries or raspberries
- 1 cantaloupe
- 1/2 lemon (optional)
- honey (optional)
- Rinse berries in a colander and leave in the sink to drain.
- Rinse cantaloupe, then cut in half and scoop out seeds with a spoon. Cut each half into wedges, then slice off the rind. Cut each wedge into 1- or 2-inch pieces and place in large bowl.
- Remove leaves from strawberries and cut in half or in quarters, depending on the size. Add all berries to cantaloupe.
- Squeeze juice of half a lemon over fruit if desired. Add a little honey if the fruit is too tart. Toss gently to combine.
VARIATION:
- Pour some port or sweet sherry over the salad and serve for dessert.
