Red and Green Salad

Anyone else struggling to get back into a normal eating routine after the holidays?? It can be so tricky to get out of the sugar fog even if you were pretty balanced with your eating over the past couple of months!

One of our tricks for getting back into a healthy routine is to always have salad around. Sounds a bit boring though huh?

Honestly though, salad can be so fantastic! There are lots of delicious things you can do with salad to help you get some delicious and healthy variety into your menu.

This pretty red and green salad is perfect for any day, but is also a great addition to a holiday meal, especially when pomegranates are in season.

The salad only requires three ingredients, plus your favorite vinaigrette. Super easy, super delicious…it’s a win-win!

Ingredients
  • 4 cups fresh spinach or arugula (lightly packed)
  • 1/4 cups pomegranate arils
  • 1 avocado
Servings: people

Instructions
  1. Wash and spin or pat dry the salad greens. Place in a salad bowl.
  2. Cut pomegranate in quarters and remove arils to yield 1/4 cup and sprinkle over greens.
  3. Dice avocado and scatter over salad.
  4. Top with balsamic vinaigrette.
