How to Safely Purée Hot Soups and Sauces in a Blender

Have you ever ended up with split pea soup all over your kitchen walls? Then you know that hot foods quickly release steam when blended, and the pressure can blow the top off your blender.

To safely purée hot soups or sauces in a blender, cool slightly first. Pour a small batch into the blender container. Remove the center section of the lid.

Place the lid onto the blender container firmly, then cover with a towel folded over 3 to 4 times. Hold the towel firmly in place with one hand, then turn the blender on low.

The heat expands the air in the blender container and can cause the lid to go flying off, along with all of the soup. Be careful! (This is why we prefer using a hand-held stick blender, which we place directly into the soup pot, as shown below.)

However, if you don’t own a hand-held blender, use our simple technique described above for puréeing hot foods in your blender and avoid a potentially messy situation.
