Fall has officially arrived! The days are shorter, the mornings are becoming brisk, and the evenings are almost chilly. Time to pull out your favorite sweater and take a trip to the farmers’ market for fall food and decorations.
When most people think of fall vegetables, pumpkins and squash come to mind (for good reason):
However, there are other types of veggies in season now as well. How about some root vegetables?
Roasted mixed root vegetables are delicious and easy to prepare. Just peel and cut root vegetables into similar-size pieces, then toss with olive oil, salt and pepper. Roast at 425°F for 30 minutes, or until lightly browned and fork-tender. (You can even add some broccoli, peppers and onions like we did here.)
