This is one of our favorite ways to use Chinese 5-spice. Kosher salt works best in this recipe, but any salt will do. Bring these to a Chinese New Year's dinner or any party (if you're willing to share).
Tools:rimmed baking sheet, measuring cups and spoons, medium and large bowls

- 1/4 cup sugar
- 1/2 tablespoon Chinese 5-spice
- 1 egg white
- 2 cups raw peanuts (with or without skin)
- 1 cup raw cashews (whole or pieces)
- salt (kosher or coarse ground recommended)
- Preheat oven to 275 °F. Spray oil onto a rimmed baking sheet, or line with parchment paper.
- Mix sugar and 5-spice in a large bowl. Set aside.
- Place egg white in a medium bowl and beat with a whisk (or fork) until foamy. Add nuts to the egg white and stir to coat.
- Pour nuts into the sugar and spice mixture and stir well. Spread evenly on baking sheet and sprinkle salt over them. Bake 40 to 50 minutes.
- Cool slightly (about 10 minutes), then break apart and serve. Store in an airtight container after completely cooled, if there’s any left!
