Raita is very popular in India, and you can find many versions using carrots, onions and even fruit. Cucumber raita (called tzatziki in Greece) is the most common type and is a springboard for other variations.
Tools:medium bowl, measuring cups and spoons, knife and cutting board

- 1-2 tablespoons lemon juice
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1 pinch ground black pepper
- 2 dashes hot pepper sauce (optional)
- 1 cup chopped cucumber
- 1 cup plain Greek yogurt
- In a medium bowl, combine lemon juice, honey, salt, pepper, and hot pepper sauce. Beat with a whisk (or fork).
- Chop cucumbers (peeled or not) and cilantro, then add to bowl. Toss.
- Stir in yogurt. Adjust seasonings, to taste.
- Garnish with a few cucumber slices and a sprig of cilantro if desired.
*Terminology: Sprig – refers to a small (about 1 to 2-inch) piece of herb cut from the tip end of the plant. It is comprised of the stem with leaves attached. Used to garnish dishes or drinks.
SERVING SUGGESTIONS:
- Serve with a plate of pita bread or crackers as an appetizer.
- Serve as a side to Indian food, chicken, or meat dishes.
VARIATION:
- Carrot Raita – Substitute grated carrot for cucumber and mint for cilantro.
