What do you do when you have green beans and potatoes that need to be cooked? You make Yiahni, a delicious, Greek inspired stew.

In Greece, this is called Fassolakia Yiahni, or Green Bean Stew. Yiahni, the Greek word for stew (or ragout), is cooked in a tomato and olive oil base. The more olive oil you use, the more authentic, so add more if you want. Eat this as a vegetarian stew or a side dish.

- 1 small onion
- 3 tablespoons olive oil (extra virgin recommended)
- 4 cloves garlic
- 2 medium red potatoes (about 2/3 pound)
- 3/4 pound green beans
- 1 (14.5-ounce) can crushed tomatoes
- 2 tablespoons tomato paste
- 1-1/4 cups water
- 1 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon red pepper flakes
- Chop onion and mince garlic. Heat oil in a large saucepan over medium-low heat, then add onion, but set garlic aside. Cook and stir while you continue.
- Wash and trim potatoes, but do not peel. Cut into large chunks.
- Rinse green beans in a colander, then trim ends and snap in half (or into smaller pieces if desired).
- Add garlic to onions and cook another minute.
- Add crushed tomatoes, tomato paste, water, salt, pepper, and red pepper. Bring to a simmer and cook 2 minutes (uncovered).
- Stir in green beans and potatoes. Cover and simmer about 10 minutes. Uncover and cook another 20 to 30 minutes, or until vegetables are soft and part of the liquid has cooked off. Remove from heat.
- Stir in (or garnish with) Parmesan cheese if desired.
SERVING SUGGESTIONS:
- Spoon about 2 cups into a bowl. Top with a slice of feta cheese (in place of Parmesan) and serve with a thick piece of crusty bread.
- Serve on a pasta plate or in a shallow bowl, with a piece of grilled or sautéed fish on top. Cod is a good choice.
VARIATION:
- Drain and rinse 1 (15-ounce) can white beans, and add to dish in the last 5 minutes of cooking to turn this into a complete vegetarian meal.
