  • 1 large lemon or lime
  • 2 tablespoons olive oil preferably extra virgin

Instructions
  1. If using a fresh orange, grate the zest with the medium to fine holes on a grater. Cut the orange in half and juice, using a hand juicer or simply squeezing by hand.* Pour 1/2 cup juice into blender.
  2. Juice lemon (or lime) and scoop out the flesh of the avocado, then add to blender.
  3. Add all remaining ingredients and blend until smooth. Adjust seasonings, to taste.
Recipe Notes

*Technique: How to Juice Lemons and Limes by Hand – Hold one half of a lemon in your hand. Squeeze it into the other hand, which is cupped with fingers slightly apart. The juice will run through your fingers, while you catch the seeds. To get a little more out of the lemon, poke the inside with a fork and twist first, then squeeze.

SERVING SUGGESTION:

  • Serve on Kale Salad, any green salad, a wedge of cabbage, or grilled salmon.

This dressing is INCREDIBLE!! Not only is it simple to make & inexpensive… it is also absolutely DELISH!! It’s creamy, tart, & sweet in all the right ways. I will definitely be making this one again!

We like to add this dressing to just about any salad. Try it on a green salad with Asian pears or crisp apples, or even a simple wedge of cabbage. Glad you liked it too.

KITCHEN ESSENTIALS

Our concept for the Finite Foodie® has these simple goals in mind —

3. To inspire you with healthful, easy recipes.

When we simmer a chicken in water (see our recipe for Slow Cooked Chicken) we end up with a pot full of rather bland chicken broth. No problem! Once we’ve removed the meat, we add the carcass back to the broth, throw in some vegetables and make a rich and complex bone broth. You can…
