“It was the end of the summer, and I had a bumper crop of tomatoes. Believe it or not, I had never made my own basic salsa, nor did I have a recipe to do so. Occasionally I’ll buy some for a party, but we just don’t eat chips and salsa any other time.
“I was planning to cook our One-Dish Chicken with Salsa and thought I should use up some of my tomatoes and make homemade salsa for the recipe. I don’t know why I never did this before! It was so easy and tasted much fresher than jarred salsas.
“There are many types of salsas and even more recipes, but this is just a basic one to get you started. From there, feel free to experiment and give it your own signature. I usually use cilantro, but sometimes I go out to my garden and use whatever herb is plentiful, like basil or chives, or a combination.”

Once you make a basic salsa with fresh ingredients, you'll never want to buy the jarred ones again! Use this as a foundation, then create new variations that reflect your style and taste preferences.

- 2 large tomatoes (about 2 cups chopped)
- 1/4 cup chopped onions
- 1/4 cup chopped cilantro
- 1 small jalapeño pepper (optional)
- 2 cloves garlic
- 1 lime (about 1-1/2 tablespoons juice)
- 1/2 tablespoon oil (extra virgin olive oil recommended)
- 1/2 teaspoon salt
- 1 pinch ground black pepper
- 2 dashes hot pepper sauce
- Cut the tomatoes in halves or quarters. Scoop or squeeze out most of the center seeds and juices. Chop to the size you prefer for your salsa. Place in a medium bowl.
- Finely chop onion and cilantro, then add to tomatoes.
- Cut off stem end of the pepper and slice in half lengthwise. Remove and discard inner seeds and pith. (Wear gloves if sensitive.) Mince one half of the jalapeño and add to tomato mixture. We recommend starting with half, then adding more at the end if desired.
- Mince garlic and add.
- Juice lime directly into salsa. Add oil and stir well.
- Season with salt, pepper, and hot sauce. Add more seasonings and jalapeño, to taste.
SERVING SUGGESTIONS:
- Serve with chips and guacamole.
- Serve on top of grilled chicken or salmon.
