Tools:Measuring cups and spoons, colander, large bowl, food masher (optional), large skillet
|
- 2 (15-ounce) cans black beans
- 1 large egg (or flax egg*)
- 2/3 cup cornmeal
- 1/2 cup corn
- 1/4 cup chopped cilantro (optional)
- 1 tablespoon minced garlic or 1 teaspoon garlic powder*
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon high heat cooking oil
- Drain and rinse beans in a colander. Set aside.
- Crack egg into a liquid measuring cup and lightly beat with a fork. Alternatively, make flax egg (see How to Make a Flax Egg--click on link below).
- Transfer beans to a large bowl, then lightly mash with a food masher or fork, leaving some small pieces of beans.
- Add egg and all other ingredients. Stir to blend.
- Using hands, form into patties. We make about 8 medium patties, but you can make larger ones or tiny ones for sliders.
- Heat oil in a large skillet over medium heat. Cook patties 4 to 5 minutes on each side.
*TIPS:
- See our post How to Make a Flax Egg.
- Although garlic powder didn't make our list of top spices, it's a good one to add to your pantry. Another time saver we often keep in our fridge is a jar of minced garlic. That said, nothing is quite as tasty as freshly minced garlic!
SERVING SUGGESTION:
- Serve on a bun with your favorite additions, like lettuce, tomato, pickles, cheese, etc. We like it with sriracha mayonnaise which you can make yourself by mixing as much sriracha as you want to mayo.
