It’s summertime, which means it’s also iced tea time! Actually, in the South, iced tea is served year round, so wherever you live, or whatever the time of year, how about a tall, cold glass of tea?
You can brew this indoors or make it outdoors (aka sun tea). Be advised that there is a slight — and debatable — risk of bacteria growth in sun tea (due to the temperature and lack of refrigeration), although we’ve never had any problems or heard of anyone getting sick from it. Iced tea is best when fresh. Discard after 3 to 5 days.

Tea is a versatile, healthful, and inexpensive beverage. Adjust the ratio of tea to water for your taste preference.
Tools:large (4-quart) saucepan, pitcher or glass jar
|
- 6 cups water
- 6 tea bags (your choice)
- 4 (6-inch-long) stems fresh herbs (optional)
- Bring water to a boil in a large saucepan over high heat.
- Once water boils, remove from heat. Add tea bags and rinsed herbs. Steep 2 to 10 minutes, depending on the type of tea and your taste preference.
- Remove tea bags and herbs. If desired, add 1 to 2 cups of ice to cool the tea more quickly. (This will also dilute the tea.)
- Transfer to a large glass jar or pitcher.*
- Sweeten if desired. Store tea in refrigerator.
- Place rinsed herbs in a large glass jar. Add tea bags.
- Fill jar with at least 6 cups of cold water. Cover with a lid or a piece of fabric secured with a rubber band.
- Leave in the sun about 4 hours.
- Remove herbs and tea bags.
- Add sweetener and dilute with more water if desired. Store tea in refrigerator.
*Chef’s Tips:
a) Recommended herbs include mint, basil, lemon balm, and tarragon.
b) Never pour boiling water into a glass container, unless it is made of tempered, shatterproof glass. Allow the liquid to cool slightly first.
SERVING SUGGESTION:
- Pour over ice and garnish with a slice of lemon and/or a sprig of mint or other herb.
VARIATION:
- Sweet Tea – Add desired amount of sweetener to the tea after removing tea bags, and before adding ice. Stir until dissolved.
