This is a very simple kale salad, which makes it even more important to buy fresh kale. We use regular curly kale that is tender and mild. Tear off a little piece and taste it to make sure it’s not tough and/or bitter. Combine it with Avocado Orange Dressing.

Make our recipe for Avocado Orange Dressing (under Miscellaneous in Recipes) and add it to this simple kale salad. Use mandarin oranges packed in juice if possible and choose a can between 8 and 11 ounces (the sizes vary). This salad keeps up to 3 days without wilting or turning brown, making it a good make-ahead menu option when you know you'll be busy.

- 1 recipe Avocado Orange Dressing
- 1 bunch kale or 8 to 10 cups chopped, lightly packed
- 1 (8 to 11-ounce) can mandarin oranges in juice
- 2 tablespoons thinly sliced shallot or scallion (optional)
- 1/2 cup pecans chopped
- Make the Avocado Orange Dressing per recipe instructions.
- Cut kale leaves off the stems, then cut into bite-size pieces to yield 8 to 10 cups lightly packed. Rinse in a colander (or the insert of a salad spinner), then pat (or spin) dry. Place in a large bowl.
- Combine about half the dressing and kale; toss to coat well.
- Drain mandarin oranges and add to salad, gently tossing again. Add more dressing if desired, or serve extra on the side.
- Coarsely chop pecans and sprinkle on top before serving.
VARIATIONS:
- Use walnuts, cashews or pistachios instead of pecans.
- Substitute 1/4 cup dried cranberries for mandarin oranges and add 1/2 cup goat or feta cheese crumbles. Otherwise, follow recipe, using whichever nut you want.

This is the only kale salad I have personally made that I actually enjoy and will make again!! Next, I want to try it with lacinato/dinosaur kale 😀
My only advice is to be careful when you are buying the mandarin oranges. I really don’t like the “chemically” taste of manmade sugar, and, I assumed since the packaging said “no sugar added” that it would be all natural or nothing added at all. I was wrong! I’ll have to be more careful at the grocery store next time.

Thanks, Jessica! So glad you liked it! You’re right about the mandarin oranges. We buy ours at Whole Foods or similar markets. One trick, if they’re stored in syrup, is to rinse the mandarin orange segments.
