Kale Salad with Avocado Orange Dressing

March 24, 2016 by Finite Foodie 2 Comments

This is a very simple kale salad, which makes it even more important to buy fresh kale. We use regular curly kale that is tender and mild. Tear off a little piece and taste it to make sure it’s not tough and/or bitter. Combine it with Avocado Orange Dressing. Difficulty: Moderate Cost: Moderate Serves:10cups Serving…

Creamy Dill Sauce

March 24, 2016 by Finite Foodie Leave a Comment

Serve this light version of béchamel sauce over poached, grilled, or pan-seared salmon. We like to use less flour than most classic recipes. Choose either white or white whole wheat flour.

Avocado Orange Dressing

March 24, 2016 by Finite Foodie 2 Comments

You’ll need a blender for this one. If using a fresh orange for the juice, add the grated zest for a stronger orange flavor. Otherwise, purchase orange juice to save time.

Pan-Seared Salmon

March 24, 2016 by Finite Foodie Leave a Comment

If you don’t have an outdoor grill, this is a great option for nicely browned salmon fillets that are crisp on the outside and moist on the inside. This method cooks the fish very quickly, so keep that in mind when you’re preparing a meal. You’ll want to serve these fillets shortly after taking them…

Steamed Asparagus

March 24, 2016 by Finite Foodie Leave a Comment

Asparagus is in season during the early to late spring months, peaking around Easter. That’s why it makes an appearance on our Easter menu almost every year. This delicate vegetable shines even when simply steamed and served with a touch of butter. You can dress up streamed asparagus by drizzling some homemade French vinaigrette over…

Southern Relish Tray

March 24, 2016 by Finite Foodie Leave a Comment

“Growing up in Texas, we always had a relish tray with family get-togethers, holiday dinners and with every Sunday dinner. The platter was usually served with the meal (there was no such thing as hors d’oeuvres in our house). Now, we like to serve it as a Southern style antipasto, along with Deviled Eggs, pimento…

Chocolate Icebox Cake with Berries

March 24, 2016 by Finite Foodie Leave a Comment

This is the easiest ‘cake’ you can make. Actually, it’s not really a cake, and you don’t bake it. Typically, an icebox cake is “cooked” in the icebox (or refrigerator as we now call it). The classic icebox cake is made with Nabisco Famous Chocolate Wafers, but when we read the ingredient list, we knew…

Cabbage and Potatoes (Colcannon)

March 14, 2016 by Finite Foodie Leave a Comment

This dish is found in many cultures, with slight variations, and of course, different names. It’s called Colcannon in Ireland and Rumbledethumps in Scotland. Bubble and Squeak is a British variation that usually contains sausage as well. We like to call ours Colcannon, due to our Irish heritage, and we often serve it on St….

HOW TO SET UP YOUR FIRST KITCHEN (Click on photo to read more.)

KITCHEN ESSENTIALS

Our concept for the Finite Foodie® has these simple goals in mind —

1. To provide simple, clear steps for setting up your first, probably small kitchen with a minimal amount of equipment and investment.

2. To teach you cooking basics,  terminology and terms, and common conversions and equivalents.

3. To inspire you with healthful, easy recipes.

When we simmer a chicken in water (see our recipe for Slow Cooked Chicken) we end up with a pot full of rather bland chicken broth. No problem! Once we’ve removed the meat, we add the carcass back to the broth, throw in some vegetables and make a rich and complex bone broth. You can…
