Meatballs are a fantastic and easy way to use up some ground meat from your freezer. You can make meatballs out of basically any meat. This recipe focuses on using turkey, but you can easily swap that out for another meat you have available.
This recipe is also easily made gluten free. If you’re looking for gluten-free breadcrumbs, one of our favorites is Glutino brand. Another good choice that will provide more protein is Watusee’s Chickpea Crumbs.
Serve the meatballs with spaghetti squash, spiralized veggies, or your favorite pasta (regular or gluten-free). Also, take a look at our recipe for Fresh Tomato Basil Sauce if you have time to make your own.

These easy turkey meatballs are versatile too. We've sometimes added chopped bell pepper or frozen, chopped greens (thawed) in place of or in addition to the celery. Use regular or gluten-free breadcrumbs to stretch the meat out.
Tools:8x8-inch baking dish, large bowl, knife and cutting board, measuring cups and spoons

- 1 large egg
- 1/3 cup finely diced onion
- 1/3 cup finely diced celery
- 3 cloves garlic (about 1 tablespoon minced)
- 1 cup breadcrumbs (regular or gluten-free)
- 1 teaspoon salt
- 1 teaspoon dried oregano leaves
- 1/2 teaspoon dried thyme leaves
- 1/8 teaspoon ground black pepper
- 1 pound ground dark turkey
- 1 (25 to 32-ounce) jar pasta sauce or our recipe for Fresh Tomato Basil Sauce
- 1/4 cup grated Parmesan cheese
- Preheat oven to 375°F. Spray or rub oil into baking dish.
- Break egg into a large bowl and beat lightly with a whisk (or fork).
- Chop celery, onion, and garlic, adding to bowl as you finish each one.
- Stir in bread crumbs, herbs, and seasonings.
- Add ground turkey and mix with a spoon or hands just until everything is well incorporated.
- Form into nine (1-1/2 to 2-inch-diameter) balls and place in the greased baking dish.
- Bake (uncovered) for 20 minutes.
- Remove dish from oven and pour your favorite pasta sauce over the meatballs. Continue baking 15 minutes, or until done.
SERVING SUGGESTION:
• Serve over pasta or spaghetti squash.
VARIATION:
• Skip the sauce and bake 35 minutes or until done. These are delicious on their own, served with roasted vegetables and a baked potato.
