Bok Choy with Garlic and Olive Oil
Roast Chicken with salt and pepper is one of our favorite foods to cook. It’s so easy, and goes with just about anything. The only problem is that it requires a little over an hour to prepare and cook. However, if you get home early enough or work at home, this could be a great dish to add to your core group of recipes. You can also vary the flavor using different herbs and spices. We also like Lemon Pepper Roast Chicken or the rosemary and garlic variation.
For this meal, we cooked some Basic Brown Rice on the stovetop while the chicken was in the oven, but Basic Quinoa or Millet can be used instead.
Finally, we cooked a bunch of baby boy choy in olive oil and garlic. If you can’t find baby bok choy, you can do the same thing with large bok choy, Chinese (Napa) or Savoy cabbage, spinach, or Swiss chard. For color and texture, you could add some carrot sticks, which is one of our favorite last-minute things to do. Fresh fruit is another way to add color.
There are so many sides that work well with roast chicken! Look at all of our Vegetable Sides and choose your favorite. Instead of a grain, try a Baked Potato and just put it in the oven with the chicken, right on the oven rack. Boiled or steamed potatoes are also very easy to do.
