Grandma’s Best Fruit Cobbler Recipe

This recipe was inspired by our Peach Cobbler with Ginger recipe. I am always looking for ways to create slightly healthier dessert recipes that my kids will enjoy. I also love looking for ways to adapt recipes to be gluten free or vegan. While this one still calls for regular butter, it works very well with gluten free flour instead of the called for flour.

Whether you are looking for a great dessert to celebrate a summer holiday, or just a dessert to enjoy just because, this recipe is a hit.

I love exploring with different kinds of fruit as well and while peach will always have a special place in my heart (and stomach), apples, cherries, and mixed berries have all turned out exceptionally well!

Experimenting with desserts is seriously so fun. I can’t wait to hear about your creations.

This recipe can easily use a variety of fruits depending on what's in season near you. You can also make some swaps to make the recipe gluten free. This recipe is is just sweet enough without being too sweet so everyone in your family can enjoy it!

Ingredients
Filling:
  • 3 cups fresh fruit (chopped or sliced)
  • 2 tablespoons honey (or maple syrup) *
Batter:
  • 1/4 cup butter (1/2 stick)
  • 1/2 cup all-purpose white flour
  • 1/3 cup whole wheat flour (pastry flour recommended)
  • 1/2 cup granulated sugar (or coconut sugar)
  • 1-1/2 teaspoons ground cinnamon (1/2 tablespoon)
  • 1-1/2 teaspoons baking powder (1/2 tablespoon)
  • 1/4 teaspoon salt
  • 3/4 cup milk (or non-dairy milk)
Garnish:
  • 2 tablespoons granulated sugar (or coconut sugar)

Instructions
  1. Preheat oven to 350°F.
  2. Prepare fruit by slicing or chopping into large chunks. Place in a large bowl. Do not add honey yet (it will cause the fruit to macerate,* which you don’t want here).
  3. When oven has reached the proper temperature, put butter in baking dish and place in oven to melt.
  4. While butter melts, combine all remaining ingredients for the batter, except the milk, in a medium bowl, and mix. Measure out the milk, but DO NOT ADD it yet! Get ready to do the next steps quickly.
  5. When the butter has melted and is bubbling, but not burned, remove the dish from the oven. Immediately and quickly stir milk into the dry ingredients with a whisk (or fork). Don't overmix.
  6. Immediately pour the batter directly into the center of the baking dish with the melted butter in it, but do not stir. (It will start to bubble up and cook a little.)
  7. Very quickly toss fruit with honey, then pour on top of the batter. Arrange evenly throughout, pushing them down into the batter, but not stirring.
  8. Sprinkle sugar over the mixture, if desired, and bake 50 to 60 minutes, or until bubbling and browned on top.
  9. Cool at least 30 minutes to set, if you can stand to wait!
Recipe Notes

RECOMMENDED SWAPS:

  • Swap all flour with gluten free 1:1 baking flour to make the dish gluten free
  • Swap granulated sugar with coconut sugar to reduce sweetness and make it a little healthier

TERMINOLOGY:

  • Macerate– to soften by soaking in juices. Example: Adding sugar to fruit pulls out the juices and softens the fruit. It also forms a sweet syrup.

SERVING SUGGESTIONS:

  • Serve plain, or with cream (whipped or not).
  • Serve with vanilla or mint ice cream.
