Grits (plain and simple)

There are many ways to prepare grits, most of which are creamy and cheesy. That was a problem when we were trying to prepare a vegan version. So, we just made up our own recipe that can be made dairy-free or not. Easily turn these plain (and not too rich) grits into cheese grits by stirring in 1 cup grated cheese (regular or vegan).

Grits go with just about anything, and can even be eaten as a hot breakfast cereal. In the South, you’ll see shrimp and grits on most menus. We decided to pair it with our Salmon and Red Pepper Sauce and a side of Southern Succotash.

Ingredients
  • 2 cups water
  • 1/2 cup milk or non-dairy substitute
  • 1/2 cup grits (white)
  • 2 tablespoons butter or vegan substitute
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
Optional:
  • 1 cups grated cheese or vegan substitute

Instructions
  1. Heat water and milk in saucepan over medium-high heat until boiling.
  2. Stir in grits and cook on low (covered, with lid ajar) 20 to 40 minutes, stirring frequently. NOTE: The amount of time depends on the brand of grits and your preference.
  3. Remove from heat and stir in butter, salt, and pepper.
  4. Stir in cheese if desired.
