APPLE PECAN CRISP

“I’m a southern girl, so I like pecans in just about everything, including apple crisp. We always had pecan trees in our yard, as did my grandparents, so we feasted on pecans all year long.  To this day I still receive bags of fresh pecans from my parents whenever I run out, and they’re still a favorite. The fresh aroma of toasted pecans always brings back good memories of holidays at home.” ~ Bobbi

Ingredients
Filling:
  • 7-8 cups chopped apples l(about 5 large apples)
  • 1/4 cup brown sugar (firmly packed*)
  • 1 teaspoon ground cinnamon
Topping:
  • 6 tablespoons butter
  • 2/3 cup old-fashioned rolled oats
  • 1/2 cup whole wheat flour or any gluten-free flour
  • 1/2 cup chopped pecans (optional)
  • 1/3 cup brown sugar (firmly packed*)
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions
For filling:
  1. Peel apples, cut in quarters and remove core. Cut into chunks by slicing each quarter lengthwise into two or three pieces, then cutting across in half. Place in a large bowl.
  2. Add sugar and cinnamon, then stir to coat.
  3. Spray or rub oil onto an 8x8-inch baking dish. Pour apples into the baking dish and spread out evenly.
  4. Begin to preheat oven to 350°F.
For topping:
  1. Cut butter into small pieces and place in the bowl you used for the apples. (No need to clean it.) Add remaining topping ingredients.
  2. Stir and use your fingers to combine until crumbly.
  3. Sprinkle topping evenly over the apple mixture. Bake 50 minutes, or until apples are soft and mixture is bubbling.
  4. Cool at least 10 minutes before serving.
  5. Serve with ice cream or whipped cream, if desired.
Recipe Notes

*Technique: To firmly pack brown sugar, fill a measuring cup about half full of brown sugar. Press the sugar down with the back of the spoon. Add more sugar, pressing down and repeating until level with top edge.

VARIATION:

  • Substitute crisp pears for the apples.
