Roasted Butternut Squash Slices

November 29, 2015 by Finite Foodie 3 Comments

Fall is here, and so are the fall and winter squashes. Here’s a great idea for using butternut squash. Serve these as an appetizer, snack, or side dish.

Tip: Place squash slices in a large bowl with a lid and shake to coat them with spices.

Make these as spicy as you like, but don’t leave the heat out--it’s a very nice contrast to the sweetness of the squash.

Ingredients
  • 1 (2 to 3-pound) butternut squash (4 to 5 cups sliced)
  • 2 tablespoons high heat cooking oil
  • hot pepper sauce to taste
  • 1 tablespoon flour (any type)
  • 2 teaspoons curry powder

Servings: people

Instructions
  1. Preheat oven to 425°F. Spray or rub oil on a baking sheet.
  2. Trim ends off squash, cut in half lengthwise, and scoop out seeds. Peel, then slice across to make 1/2-inch-thick slices. Place in a large bowl* and add oil and hot sauce. Toss to coat well.
  3. Mix together flour, curry powder, salt, and pepper in a small bowl. Sprinkle over squash sticks and toss again.
  4. Place slices on the greased baking sheet in one layer. Cover with foil and bake 20 minutes. Remove foil and bake another 15 minutes. Use a food turner to turn the slices over and bake another 15 minutes, for a total of 50 minutes.
  5. If desired, squeeze some lemon juice over the slices right before serving, or serve with a wedge of lemon so each person can do their own.

I have made this several times. It is amazingly delicious. If pressed for time when preparing it for a side dish, I have used the pre-cut butternut squash that is readily available in grocery stores (though you may have to search for it.)

So glad you enjoyed this. Great idea to use the pre-cut chunks! That definitely saves time. Please let us know when you try any of the other recipes.

1. To provide simple, clear steps for setting up your first, probably small kitchen with a minimal amount of equipment and investment.

2. To teach you cooking basics,  terminology and terms, and common conversions and equivalents.

3. To inspire you with healthful, easy recipes.

When we simmer a chicken in water (see our recipe for Slow Cooked Chicken) we end up with a pot full of rather bland chicken broth. No problem! Once we’ve removed the meat, we add the carcass back to the broth, throw in some vegetables and make a rich and complex bone broth. You can…
